coffee: hot and cold

This is not about which temperature is better.
The question I have is why does hot coffee taste like crap when it cools off, and iced coffee taste like crap when it warms up? Is there a fundamental difference in the molecular structure of the coffee when brewed at different temperatures, or is it simply that luke-wark coffee tastes like crap?
