Pork Fat Rules

So, even though I did not personally cook a turkey for Thanksgiving, I was able to swindle my future father-in-law's turkey for my own benefit. Here's where it gets interesting... I used the turkey to make Turkey Cakes (like crab cakes, but with turkey instead, fool). And they were great. I loosley followed a recipe I saw on Emeril Live for chicken cakes exactly, but with a dijon sauce, and Aditi said she never ate turkey and enjoyed it as much as this.
I rule at life.
